Wheat Chocolate Cake with Blueberries
We are coming to the traditional Russian Christmas. We celebrate Christmas in Russia on January 7th prior to the Russian Orthodox Church Calendar which is based on Julian Calendar. People in Russia celebrate this day like here in United States with a family dinner and visiting family and friends. Christmas day in Russia started to be celebrated few years after the collapse of the Soviet Union which during the Soviet Union time this holiday was discouraged, this is why this holiday is not as important as a New Year’s Day. However, I am trying to keep all my Russian Traditions and follow them as is my family. We are going to have a Christmas Eve dinner on January 6th and have a few small presents under our Christmas tree which I keep decorated until the end of the Christmas and New Year’s holidays which end in January 14th.
I decided to make a nice and healthy dessert for this special day, which will go well with our Christmas Eve dinner and also has lower calories.
This cake is made of the whole wheat flour where the rich chocolate and blueberry flavors makes it mouthwatering.
For about 8 servings you will need:
• 1 egg
• 1 cup of sugar
• 6 tablespoons of cocoa powder
• 1 cup of flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 3/4 cup f water
• 1/2 cup of fresh or frozen blueberries
For the topping:
1/2 cup semisweet dark chocolate pieces
6 tablespoons of whipping cream
fresh blueberries and mint leaves for decorations
In a bowl combine all dry ingredients: flour, sugar, cocoa powder, baking soda and salt, set it aside.
Pour it into the flour and mix it well.
Pour it into the greased 8″ inch or 8″ square pan
and bake it for 30 minutes or until a wooden stick comes out clean.
In small pan bring the whipping cream to the boil and immediately take it off the heat. Pour it over the chocolate pieces and let it sit for few minutes then stir it until it becomes smooth in consistency.
Let it thicken up a little then pour it over your cake. Decorate your cake with fresh blueberries and mint leaves.
