Vitamin Soup- Gazpacho
Today I would like to share with you my version of Spanish Gazpacho soup that I like to make during hot summer days. Gazpacho was discovered about 2,000 years ago by Spanish muleteer. This cold soup is not just tasty but also very healthy.
There are many variations on how to make Gazpacho, I tried most of them and found my perfect recipe which is easy to make and does not require any previous culinary experience. The main ingredient in Gazpacho soup is tomatoes; this is a base of the soup. All other ingredients are different vegetables you can experiment on your own and add any vegetables that you like. Also the good part of this recipe that the longer soup is being left in refrigerator the tastier it becomes. It means that it taste great as a left over and can be refrigerated up to one week.
You can serve this soup with grilled shrimp, fish or chicken. I like it served with Grilled Parmesan Sourdough Bread.
For 4 servings you will need:
• 2 cups of tomato juice better to use fresh made
• 1 large zucchini chopped
• 1 medium cucumber chopped
• 9 cherry tomatoes or 1 large chopped tomato
• ½ cup chopped parsley or cilantro
• 1 bell pepper chopped optional
• ½ red onion chopped optional
• 1glave garlic minced
• 1 tablespoon cane sugar or white sugar
• 1 tablespoon lemon juice
• 1 teaspoon pink Himalayan salt
• Black pepper to taste
• Parsley and olive oil to garnish
Make fresh tomato juice.
Chop all vegetables that you are going to use: tomatoes, zucchini, cucumber, onion, bell pepper and garlic. In my recipe I am using tomatoes, zucchini, cucumber and parsley.
In the blander bring together chopped vegetables, parsley, and salt, sugar and lemon juice, pour one cup of tomato juice and blend for 2-3 minutes until you reach your desired consistency.
Transfer vegetables into large mixing bowl and add the rest of your tomato juice into it. Mix it together well and place into the refrigerator for about 2 hours.
When it is done garnish with parsley and olive oil. You can also garnish it with cubed avocado.
