Uzbek Meat Dumplings -Chebureks
Everybody who grew up in Russia is familiar with traditional Uzbek meat dumplings – Chebureks. There are considered to be one of the most popular Central Asian fast food dishes. You can find Chebureks being sold on any open markets in Central Asia and most of the Russian Federation. There are so many different recipes on-line as to how to make these dumplings and many different techniques but I found the one which works perfect for this recipe and the dough turns out light and thin with a beautiful golden crust. This dish is traditionally served with green tea and fruits but you can serve it with many different sauces that you like or with fresh tomatoes salsa.
For about 10 Chebureks you will need:
• 3 1/2 cups of all purpose flour
• 1 cup of boiling hot water
• 1 tablespoon of vegetable oil
• 1 teaspoon of salt
• 1 tablespoon of vodka
• 1 egg
• 1/2 pound of ground pork
• 1/2 pound of ground beef
• 1/4 cup chopped green onion
• 1 teaspoon cumin seeds
• salt and pepper to taste
• 1/2 cup of water
• vegetable oil for frying
Boil cup of water and pour it over 1 cup of flour, mix it together well and let it cool. In separate bowl combine together flour, salt, egg, vodka, and 1tablespoon of oil then add your boiled water and flour mixture to it. Mix it all together and set a site to let the dough to rest .
Meanwhile prepare the meat filling. Mix pork and beef, then add onion, salt , pepper and water, we need to add water to the meat to make it more juicier. Mix filling well.
Divide prepared dough into 9-10 pieces
and roll each piece making it almost paper thin. Put your meat filling on one side of the rolled dough
and fold it into halve then seal the edges, cut edges to make them even with pizza cutter or special pie cutting tool. Fry each dumpling in hot oil for about 4-5 minutes on each side until they turn golden in color.
Serve Chebureks hot with your favorite sauce!
