Tuna, Cranberry and Apple Pita Sandwich
I am always looking for light lunch recipe ideas that will be easy to make and also be delicious. I like tuna or chicken salad sandwiches because they are light, easy to make and also very tasty but I always thought that this sandwich is missing something and as I always like to do, I decided to do experiment and try it with a few added ingredients which I believe changed the taste completely of this sandwich and add better and more fulfilling touch into it. This sandwich also can be made with leftover turkey from Thanksgiving dinner as a great next day lunch alternative.
For 4 servings you will need:
• 4 pita halves
• handful of fresh Spinach
• 8 oz light Tuna
• 4 tablespoons dry Cranberries
• 1/2 Apple skinned and sliced into bite size
• 1 stalk chopped Celery to all some crunch
• 2 tablespoons olive oil mayonnaise
• salt and pepper to taste
• 1 tablespoon of lemon juice
In the mixing bowl break tuna into smaller pieces with a fork.
Then add Cranberries, Apple, Celery , salt and pepper
and mix it with mayo and lemon juice.
Place the bowl into refrigerator for about 1 hour.
Stuff pita halves with some spinach and tuna salad. Serve it with Sweet Potatoes Chips and Cranberry Dipping Sauce.
