Taco Bakes with Fresh Tomatoes Salsa
This recipe I created myself on the fly with some leftovers, it was just an experiment that became a hit at our Saturday Barbeque party. I made lettuce wrapped tacos few days ago and did not know how to dispose the leftover meat with sauce. I decide to make a Russian pirojki with the taco meat and called them taco bakes. We all know that tacos are also going well with salsa and I thought that the salsa made from the fresh tomatoes will go along nicely with my pirojki. This recipe is really easy to make and it is delicious.
For 20 taco bakes you will need:
• 2 cans of canned biscuits (10 counts each)
• About one pound of taco meat click here on how to make it
• 1 tablespoon sesame seeds for garnishing
For the tomato salsa you will need:
• 1 large tomato
• ½ of bell pepper
• ¼ cup of fresh chopped cilantro
• ½ of red onion
• Juice from one key lime
• ½ teaspoon salt
• 1 tablespoon of sugar
• ½ teaspoon ground cumin
• ½ teaspoon chili pepper (optional)
Prepare filling for the tacos first follow the instruction here.
Preheat the oven to 350F. Roll each biscuit to about ¼ inch thick, put about one teaspoon of the filling in the middle, fold the ends together and pinch the ends to prevent the filling from leaking out.
Repeat with the rest of the biscuits. Transfer each taco to a baking sheet covered with the parchment paper. Bake tacos for about 15 minutes until they turn a light golden color.
While tacos are still cooking prepare salsa. Chop tomatoes, parsley, bell pepper and onion.
Blend all this chopped vegetables in a blender then add salt, sugar, ground cumin, lemon juice and chili pepper.
Mix it well.
Serve your taco bakes with your fresh made salsa!
