Sweet Potatoes Patties with Corn
I found this recipe surfing Pinterest and decided to give it a try. This will be a good side dish addition for any meat or poultry dinner. For someone who enjoys introduce a new dish to their taste it will be a great recipe. It is light, it is sweet and it is very easy to make.
For 4 servings you will need:
• 1 large sweet potatoes
• 1/2 cup fresh or frozen corn
• handful chopped green onion
• bread crumbs for coating
• 1/4 cup oil for frying
Bake sweet potato wrapped in aluminum foil for 35-40 minutes at 350F until fully cooked. Let it cool completely and then mash it with fork until smooth.
Add corn and green onion and mix it together very well. Form patties with your hands out of the potato mixture and coat them with bread crumbs. In a skillet preheat oil and brown the potatoes patties for 3 minutes on each side.
In order to keep your potatoes patties warm, place them on baking sheet and place them in a 350F oven for 5-6 minutes. This will give you some time to prepare your main dish like poultry or meat to go with your patties. Enjoy!
