Sweet Potato Chips with Cranberry Dipping Sauce
My family loves potatoes chips but they are usually not that healthy and consist a lot of salt. I decided to make an alternative and sweet potatoes can be made into baked chips are light, less salty, tasty and much healthier. These chips will go very well with any sandwich like the recipes you will find here, such as Tuna, Apple and the unique and tasty Cranberry Pita Sandwich. It is also a great appetizer for your family and guests that could be served before Thanksgiving dinner.
For 3-4 servings you will need:
• 1-2 large sweet potatoes thin sliced
• salt and pepper to taste
• 3-4 tablespoons of olive oil
For dipping sauce you will need:
1 cup Zesty Cranberry Sauce
1 tablespoon of mayo
1 tablespoon orange juice
Preheat oven to 300F. Slice sweet potatoes about 1/2 inch thick. Place them into the mixing bowl and coat evenly with salt, pepper and olive oil.
Bake sweet potatoes until they get crisp but make sure that they do not burn.
To prepare sauce. Mix cranberry sauce, mayo and orange juice until well combined.
Serve your potatoes chips warm with fresh made cranberry sauce.
