Stuffed Turkey Breast with Cornbread, Dry Fruits and Apples
Sometimes I have a desire to have a Thanksgiving dinner more than once a year. This recipe is a great way to satisfy your desire for a mini Thanksgiving feast. Your Turkey breast will come out moist and delicious, the aroma while you are making it filling up the whole house and your family like just in the Thanksgiving day all circling around the kitchen and wondering when they can try your dinner, it is just irresistible. Is it the most enjoyable time for a cook and a mom? I believe so!
This recipe will feed 3-4 people.
This is what you will need:
1 turkey breast already pre-marinated, you can find them in most grocery stores
For the stuffing you will need:
1 cup of cornbread croutons
½ cup chicken stock
½ Granny Smith apple chopped
Handful of any dry berries or fruits
1 celery stalk shopped
3 tablespoon of butter
Preheat oven to 375F. First prepare the stuffing. In the frying pan melt butter then add chopped celery and cook it for 3 minutes.
Bring chopped apple and dry fruits into the pan and cook it together with the celery for another 2-3 minutes.
Add cornbread croutons and chicken stock into fruit mixture and fluff it with the fork until it become moist. Take it from the heat and set aside until it cools.
On the cutting board flatten the turkey breast by slicing it horizontally making a butterfly cut. Place your prepared stuffing in the middle and roll it.
Place stuffed turkey breast into greased baking dish and bake for about 50 minutes to one hour until the internal temperature will reach 165F.
When it is done let it rest for about 10 minutes before slicing it.
Serve with my favorite Zesty Cranberry Sauce (recipe is coming soon)and yummy mashed potatoes.
