Sponge Apple Cake
Sponge Apple Cake is one of the traditional Russian desserts that most Russian people make when unexpected guests are coming. There are many variations as how to make this cake. My dessert does not take a lot of time to prepare and uses very simple ingredients that most of us have at home.
This is what you will need:
• 3 Granny Smith apples
• 4 eggs
• 1 cup all purpose flour
• 1 cup of natural cane sugar or white sugar
• 1 tablespoon lemon juice
• 3 tablespoons rum
• 1 teaspoon cinnamon
• 2 tablespoons unsalted butter or margarine
Preheat oven to 355 F. Slice apples then add lemon juice, rum and cinnamon and let it set aside to let the flavor soaks in.
In the big mixing ball combine eggs and sugar, use a mixer and mix it until eggs double in size.
Then slowly add sifted flour and combine mixture until it gets smooth.
Grease the baking dish with butter and then spread sliced apples on the bottom of the dish.
Evenly pour the dough mixture on top of the apples.
Place dish into the oven and bake for about 40 to 50 minutes, check if it is ready with the wooden stick.
Let cake cool down then serve it with wiped cream or powdered sugar.
After making the cake my daughter and her friend had some fun decorating their piece of cake.
