Spaghetti with Squash and Goat Cheese
My family is not a big squash lover the only dish that they like with squash is pumpkin pie. And when there are days when I want to have squash I am making it for myself. Today is this day! I decided to cheat a little and bought already cut and cleaned squash because honestly I do not like cutting and cleaning it and I had a most delicious lunch. The sweet taste of the squash and salty goat cheese and Parmesan is good combination of tastes for this pasta. You should try it too!
For one serving you will need:
• 150 grams of cubed squash
• 2 ounces crumbled goat cheese
• 2 tablespoons Parmesan cheese
• 1 tablespoon chopped fresh sage
• 1 tablespoon oil
• 2 ounces uncooked spaghetti pasta
Cook pasta according to the instruction on the package. Reserve about 1 cup of water from pasta for sauce.
In skillet heat the oil and add cubed squash and toss it fro few minutes until it gets nice golden color.
Add water from pasta, cover skillet and cook squash until it gets tender.
Add Parmesan cheese and sage, cook for about a minute.
Then mix in cooked pasta and let the sauce get into it.
Serve squash pasta with crumbled goat cheese and chopped sage if desired.
