Friday night- pizza night in our house! There are not that many people who do not like pizza and there are also thousand ways how to make a great one. This Friday I decided to surprise my family and make a seafood pizza from scratch. I made homemade whole wheat crust and decided to use basil pesto sauce instead traditional pizza sauce. And crumbled goat cheese on my pizza brought a totally different taste to my creation.
For two about 18″ round whole wheat pizza crusts you will need:
• 1 1/2 cup of warm milk
• 1 teaspoon instant dry yeast
• 1 tablespoon sugar
• 1 teaspoon salt
• 2 1/2 cups whole wheat flour
• 1 1/4 cups all purpose flour
• 3 tablespoons basil pesto
• 3/4 cup mozzarella cheese
• 2 cups uncooked though out seafood mix( I used mussels, squids, shrimp and scallops)
• 1/4 cup crumbled goat cheese
• 1 chopped tomato
• fresh basil or sage for garnishing
• 2 tablespoons melted butter for basing
In mixing bowl combine milk with yeast and sugar and let it sit for about 10 minutes or until yeast builds a foam.
Transfer this mixture into stand mixer mixing bowl turn it on medium low and gradually start adding flour mixed with salt into it. Continue knitting it until your dough forms a nice ball.
Place your dough into greased large ball, cover it with plastic and let it rise for about 1 hour or until it will double in size.
Divide your dough into two equal pieces and roll each of them about 1/2 inch thick. Evenly spread basil pesto, sprinkle with mozzarella cheese then add chopped tomatoes and uncooked seafood. Brush seafood with melted butter it adds a good flavor to the pizza.
Finally sprinkle your seafood pizza with crumbled goat cheese and bake it at 425F for 20 minutes.
Garnish baked pizza with fresh chopped herbs and serve.
