Salad with Fresh Berries and Warm Ricotta Balls
Fried cheese is very common dish in Russia. My grandmother used to make great fried farmer cheese pancakes for my sister and I for breakfast when we were kids. I thought that this warm made of cheese pancakes will be a great addition to my salad and I decided to try making it for my lunch. This salad will also be a great dish for a Christmas lunch because it is not just delicious it is also looks colorful and chic on the holiday table.
For 4-5 servings you will need:
• 15 oz Ricotta cheese
• 2 tablespoons of all purpose flour and some for coating
• 1 egg yolk
• 5-6 frozen cherries
• 1 tablespoon sugar
• 3 -4 tablespoons of oil
• pinch of salt
• 1 bag of fresh spinach leaves
• 1/2 cup blueberries
• 1/2 cup sliced strawberries
• 4 tablespoons roasted pumpkin seeds
• balsamic vinegar glaze or balsamic vinegar salad dressing
Preheat oven to 350F. In mixing bowl combine egg yolk and Ricotta cheese then add salt and sugar and mix it well.
Form balls out of this dough and place cherry in the middle.
Roll each ball into flour until evenly coated
and then fry them on both sides until they get golden in color.
Place cheese balls on baking sheet covered with parchment paper and cook for 5-7 minutes.
Place Ricotta cheese balls on top of the spinach leaves, top it with fresh berries and pumpkin seeds. Drizzle your salad with balsamic vinegar glaze and serve while still warm.
