Russian Style Gingerbread Christmas Cookies
It is now became a tradition in our family to make cookies for Santa Clause every year. My daughter and I love to make different kinds of cookies. This year we decided to make Russian Prayniki (Christmas cookies) and use them as an ornaments for our beautiful Christmas tree. There a tremendous amount of traditional Russian Christmas cookies on the Internet. I came across this recipe by accident and decided to give it shot to see how it would come out. I tried many different gingerbread cookie recipes before and most of them were just too heavy in texture and the amount of spices being used are just too much to my taste. I found this recipe to be perfect as Christmas tree ornaments and these cookies are also very light and delicious. They are easy to make and you do not need to have previous cooking experience to make something which is both a great ornament and delicious treat for your family.
For about 24 large cookies you will need:
• 2 eggs
• 1 cup brown sugar
• 1/2 cup of molasses
• 1 cup of wheat flour
• 1 1/2 cups of all purpose flour and more for dusting
• 1 room temperature butter stick
• 1/2 teaspoon ground ginger
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon cinnamon
• 1/2 teaspoon baking soda
• cookie icing for decoration
• sprinkles for decoration
In a mixing bowl beat butter, ginger, cinnamon, nutmeg and brown sugar until it becomes fluffy and light.
Combine molasses with the beaten butter.
Then add eggs one at a time and continue beating for at least 3 minutes until everything is combined.
Slowly add some flour and keep adding it until the dough stops being sticky.
Form a ball out of the dough.
Cover it with plastic wrap and refrigerate for about one hour. Afterword roll the dough out flat to about 1/4 inch thick and using cookie cutter cut the cookies into Christmas shapes. Cut the whole using straw to put the tread through.
Bake your cookies on greased baking sheets for 10-12 minutes at 350F until cookies turn golden in color and raise in size like it is shown below.
When they cool down decorate them as desired with icing and multicolored sprinkles.
These cookies will be a perfect decoration on your Christmas tree!

She also said that she added some ground clove and a pepper to the original recipe and it gave a nice aroma and a little zesty bite to the cookies.
