Russian Pancakes Filled with Fresh Strawberries
Every Sunday morning I like to make something special for my family. This Sunday I decided to make traditional Russian thin pancakes which here in America are called crepes. Russian pancakes are a bit different than traditional French crepes because they are normally served as a meal for breakfast or for special guests as a way to welcome them to your home. Russian pancakes are not as sweet and it is very common to serve it with smoked fish, caviar and sour cream. My family has a sweet tooth this is why I make my Russian pancakes to be filled with fresh strawberries.
From this amount of the batter you can make about 10-12 pancakes.
• 1 cup of a whole milk
• 1 cup of water
• 2 eggs
• 1 ¾ cup of white all purpose flour
• 2 tablespoons of sugar
• 1 teaspoon of pink Himalayan salt
• 3 tablespoons of olive oil
For the filling:
• 1 pint of fresh strawberries
• ½ cup powdered sugar
Preheat a medium size frying pan to high. In the mixing bowl pour flower and salt and then slowly add milk and water, whisk it together until smooth.
In the separate bowl beat eggs with the sugar for about 3 minutes then pour this mixture into the batter.
Mix everything well and add the olive oil combing it together.
Spray your preheated pan with olive oil and pour prepared batter into skillet using large ladle or serving spoon.
Spread batter across the bottom of the pan by rolling in a circular motion.
Let it cook for a minute then flip pancake and cook it for another minute. Repeat it with the rest of the batter.
For the filling: slice strawberries and sprinkle them with powdered sugar.
Fill each pancake with strawberries, roll it and serve with any other berries or fruits.
