Russian Bliny with Different Filling
This week is Maslenitsa which is big holiday in Russia celebrating the end of the winter and also the last week before Lent. During this time people have a big festival of Crepes/Pancakes or we call them Bliny in Russia.
The round shape and golden color of Bliny looks just like a Sun and signified praise to the Sun as the pancakes’ resemble it.
I decided to make Bliny for my family and use a different filling which is cooked together with Blini’s batter. There are so many variations to the Russian Bliny and I decided to make my Bliny thin with salmon, vegetables and sweet Bliny with cinnamon apples.
The secret of this recipe is that you need to use warm milk for the batter and thin sliced vegetables, fruits or fish for the filling.
For about 6-7 servings you will need:
• 3 eggs
• 2 1/2 cups of warm milk
• 2 cups all purpose flour
• 2 tablespoons of sunflower oil
• 1 tablespoon sugar
• 1 teaspoon salt
• 50 gram salmon fillet thin sliced
• 2 medium mushrooms thin sliced
• 1/4 bell pepper (any color)this sliced
• 2 tablespoons thin sliced leek
• 1 apple thin sliced for the sweet filling
First slice all the ingredients for the filling and add some salt and pepper to taste.
Slice apples thin for the sweet filling and squeeze some lemon juice on top of them to prevent apples from turning brown.
Sprinkle sugar mixed with cinnamon on top of the apples and set them aside.
In large mixing bowl beat the eggs with salt and sugar.
Add 1 cup of milk and beat it until salt and sugar are completely dissolved.
Add sifted flour and continue to mix until your batter is smooth and without lumps.
Add the rest of the milk and oil and combine it all together. It will be very runny which is the right consistency.
Set your batter aside and heat up the skillet until it is very hot.
Drop few drops of oil on the skillet
and add few sliced vegetables, cook it for about 2 minutes

then pour your Bliny batter and spread it around by moving the skillet until vegetables all covered
cook for about 1 minute and flip it to another side and cook for another minute.
To transfer them on the plate fold each Bliny in a halve and then fold it again.
To make Bliny with apples, add one tablespoon of sugar to a batter. Cook Bliny using the same steps from above.
Serve Bliny with vegetables and salmon warm with sour cream, mayo or tomato sauce mixed with a little mayo.
