Russian Beef Piroshki
Piroshki are traditional Russian dish that Russian people make for a special occasion or cook it as a daily meal. There are many different variations on how to make Piroshky and I like the way my grandmother made them. You can make your Piroshki with many different fillings and even make them for dessert with apples or berries. Last week on Friday, sense it is always Italian meal day in our family, I decided to make my Piroshky filled with ground beef cooked with Italian province herbs, mozzarella and parmesan cheese and serve them with warm marinara sauce.
For 8 large Piroshki you will need:
• 1 cup of lukewarm water
• 3 cups of white flour
• 1 tablespoon of sugar
• 1 teaspoon of salt
• 1/4 cup of olive oil
• 1 pound of ground beef
• 1/2 cup of mozzarella
• 1/4 cup parmesan cheese
• 1 tablespoon of Italian province herbs or any your favorite herbs
• salt and pepper to taste
Prepare the dough first. In a bowl mix lukewarm water with sugar then add yeast and let it sit for 10 minutes until yeast will develop the foam. Transfer liquid into the mixer bowl, place dough hook attachment and start adding flour mixed with salt on medium speed until it will develop the ball shape. Add olive oil and knit it for about 10 minutes until dough is very well knitted. Place the dough into the bowl covered with oil and let it rise for 1 1/2 hour or until it is doubled in size.
Meanwhile prepare the filling. In skillet brown the ground beef. Bring cooked ground beef into the bowl and add Parmesan, mozzarella, herbs, salt and pepper and mix it well.
Divide dough into 8 pieces. Then roll each piece into squares about 1/4 inch thick. Place meat filling in the middle and fold it like you would fold the envelope. Put prepared Piroshki with the seam down. Cover them with towel and let them rest for 15-20 minutes. Brush each Piroshki with olive oil and sprinkle with herbs or ground parmesan.
Bake Piroshki at 400F for 15-17 minutes until they are golden in color.
Serve Piroshki hot or warm with warm marinara sauce or your favorite pizza sauce. Enjoy!
