Raw Mango, Coconut and Dates Macarons
I was always kind of skeptical about raw diet because I have believed that it is not very tasty plus I am not a vegetarian and always liked my meat and steaks. When I first saw this recipe, it did not appeal to my taste and dessert preferences. Since I am always looking for healthier desserts and food alternatives for my family, I decided to give it a try.
I did my trial and change the recipe quite a bit. I decided do not make the cookies completely raw I baked them on low heat for 10 minutes and sense I am a big chocolate lover, I decided to drizzle some chocolate on top.
Surprisingly this dessert came out unexpectedly delicious! Even my husband who is a very picky eater took it to work as a snack.
These Macarons could be easily used as an energy bar if you add some nuts or grains to it.
These macarons cookies also can be a great Halloween treat for a children’s party because kids love them! You should try it too!!
For about 14 macarons you will need:
• 1 mango pilled and sliced
• 2 cups unsweetened organic coconut flakes
• dash of honey
• 1 cup pitted dates
• 2 tablespoons honey
• any your favorite nuts (optional)
• Some melted dark chocolate for drizzling
• 1 tablespoon coconut flakes for sprinkling
In the blender blend sliced mango until it will turn into puree then gradually add coconut and honey and blend it well again.
Pour coconut and mango dough into parchment paper and using spatula spread it evenly and pat it down like it is shown below.
Using the cookie cutter cut cookies. After cutting few cookies, repeat this procedure again. From this amount you should get around 24-28 single cookies.
Transfer your cookies into baking sheet covered with parchment paper and cook them at 300F for 10 minutes until light golden in color. Remove them from oven and let them cool down completely.
Meanwhile prepare the filling. Blend dates, nuts and honey in the blender until it will turn into fine paste.
Fill one cookie with the date filling and cover it with another making a sandwich.
Drizzle your Macarons with melted chocolate and sprinkle with coconut flakes.
Keep macarons refrigerated for better taste. Enjoy!
