Open Berry Pie
We are having few days of chilly weather here, it feels like fall now and when it is cool like that, I am constantly craving for something sweet, easy to make and delicious. Fall is a great time for a pie. I like berry pies served warm with a scoop of vanilla ice cream, yum it is so scrumptious. This is could be a great dessert for Thanksgiving or Christmas dinner.
For about 8 servings you will need:
• 1 piece of pie crust
• 3 cups of blackberries mixed with raspberries
• 4 tablespoons of sugar
• 2 tablespoons of cornstarch
• strong brewed cold black tea for color
• 1 tablespoon of sugar for sprinkling
• lemon juice from 1/2 lemon
• lemon zest from one lemon
Mix together sugar with cornstarch and sprinkle this mix evenly on top of the berries.
Let berries sit for 5 minutes to let mix to dissolve a little bit.
Brush edges of the crust with brewed cold tea and sprinkle sugar on top, it will give your pie a nice golden color.
Bake pie for 35-40 minutes or until the berry sauce will thicken and crust will be golden in color. Decorate with lemon zest before serving.
Serve it warm with the scoop of the vanilla ice cream. Enjoy!
