Mozzarella Turkey Meatballs
My family and I love Italian food and as always every Friday it is Italian food dinner in our house. This is my second attempt to make this Mozzarella Meatballs , my first try was not that successful. The cheese inside of the meatballs dissolved completely and was hardly seen when I cut meatballs in a halve the meat was a bit overcooked and dry. I decided to make it again and asked my daughter to help me shape the balls. She was very happy to do it then my husband decided to help as well. And at the end we did not just have a delicious dinner but also great time together as a family.
The meatballs came out as they supposed to very moist with a nicely melting Mozzarella ball inside.
For about 30 2″ inch size meatballs you will need:
• 1 or 1 1/2 pound of lean ground Turkey
• 1/2 cup Panko plain bread crumbs
• 1 egg
• 1/4 cup of water
• 1-2 tablespoons Italian Province Herbs
• salt and pepper to taste
• 3 Mozzarella sticks cut into 8 to 10 pieces each
• 2 cloves of diced garlic
• 2 tablespoons of olive oil for browning the meatballs
• 1 16oz jar of your favorite marinara sauce or spaghetti sauce
Let’s start! In mixing bowl combine together all ingredients from above and mix it well. This time I have got a lot of help to do it! Then pinch about one tablespoon out of the meat mixture and shape it into the ball. Together we made about 30 balls.
Then stick piece of Mozzarella in the middle of the each meatball before starting shaping them into the round shape, we did not do it and wound up with some meatballs not having Mozzarella inside, oops! 🙂 This happens when you have so many helpers in the kitchen! But I am not complaining!:-)
In large skillet heat olive oil then add meatballs and brown them on each side for about 2-3 minutes. Then add marinara sauce and continue to cook meatballs on low for about 10-12 minutes until internal temperature of the meatballs reaches 165F.
