Meatballs with Pine Nuts and Cranberries
All holidays are over the week of Maslenitsa is also over and now is a good time to go back on diet and get my skinny jeans to fit. This recipe is perfect for someone like me who is looking for a simple, delicious and low calories meal.
For about 6 servings you will need:
• 1 pound of lean ground pork
• 1/4 cup chopped cranberries
• 1/4 cup chopped pine nuts
• 1 teaspoon sweet paprika
• salt and pepper to taste
In large mixing bowl combine together all the ingredients from above and mix them well.
Form meatballs about 1″ in diameter. Transfer your meatballs to baking sheets covered with aluminum foil.
Set the broiler to high and cook for 6 to 8 minutes. Serve them with spinach and your favorite salad dressing.
