Manicottis or Stufforonies with Turkey, Cream Cheese and Spinach
This recipe is one of the favorite in our family and I make it very often for our Friday night Italian dinners. I saw it a long time ago on one of the cooking shows and made few changes to the recipe. My husband named them Stufforonies because these long pasta is stuffed with spinach, cream cheese, Parmesan and ground turkey you can use ricotta cheese instead but I believe that cream cheese gives a nice creamy taste to the filling which will almost melt in your mouth.
For about 5 servings you will need:
• 1 package of spinach thawed out
• 1 pound ground turkey
• 1 egg
• 8 ounces cream cheese(1 package)at room temperature
• 1/2 cup Parmesan cheese and some for garnishing
• fresh basil for garnishing
• salt and pepper to taste
• Marinara or any your favorite Spaghetti sauce or cream sauce
• 1 tablespoon olive oil
Preheat oven to 350F. Cook manicottis according to the package. And cool them completely.
Meanwhile prepare the filling. Preheat olive oil in the skillet then add ground turkey and brown it until fully cooked.
Drain the accessed oil from the turkey and cool it down.
In mixing bowl combine together cooked turkey, cream cheese, egg, Parmesan cheese, salt and pepper.
Using spoon stuff each manicotti with the filling and set aside.
Pour your Marinara sauce into deep baking dish and lay manicottis on top of it.
Drizzle some sauce on top of the manicottis’, then sprinkle with Parmesan and bake for 25-30 minutes.
Serve them hot with extra Parmesan on top if desire.
