Heavenly Bacon Brussels Sprouts
Brussels sprouts were always one of the vegetables that I did not know how to make. I tried to cook them in many different variations: steamed, boiled in chicken stock, and fried with other vegetables and meat but it always came out with a bitter flavor and left unpleasant aftertaste in my mouth.
My bad experience about Brussels sprouts changed after one evening I tried them in one of our local seafood restaurant where it was offered on the menu as a side dish.
The description on the menu brought it to my attention: Heavenly Brussels sprouts with light lemon sauce and apple wood smoked bacon. The taste was suiting the description. It tasted Heavenly and was going well with the grouper I ordered.
Still remembering the taste I decided to repeat it at home and Brussels sprouts came out just like the one I had at this restaurant.
This a great side dish for pork and fish.
For 4 servings you will need:
- 2 cups cooked Brussels sprouts
- ½ stick unsalted butter
- 2 tablespoons lemon juice
- 1 teaspoon Himalayan pink salt
- 2 cooked and chopped bacon strips or you can also use 2 tablespoons of (real) bacon bits
Trim roots and blemished leafs from Brussels sprouts. Place them in a microwave-safe bowl, cover and cook for 3 minutes. Let it cool and then slice into thin pieces. Meanwhile heat skillet to medium, add butter let it melt and then squeeze lemon juice and sprinkle salt. Transfer sliced Brussels sprouts into skillet cook for 3-4 minutes, add bacon and cook for 1 more minute and serve.
