Lettuce Wrapped Taco
My first experience with Latin American Cuisine happened just after I arrived in the US. My friend took me to a local Mexican restaurant where I tried a crunchy taco with refried beans, ground fried beef, cheddar cheese and shredded lettuce, I also fell in love with taste of warm soft flour tortillas filled with beans, ground beef, melted cheese, chopped tomatoes and topped with hot sauce and sour cream… Yum it makes my mouth water just to think about it… but after a few months of these spectacular foods I started noticing that some of my clothing did not fit me anymore (whoops!) I decided to modify and adapt this recipe without completely changing the taste and using healthier ingredients (lower calorie). This recipe tastes as good as the one I tried in our local restaurant and it is very easy to make.
This recipe will feed about 4 to 5 people.
• 1 head Iceberg lettuce
• 1 pound of lean ground beef
• 1 can of refried beans
• 2 tablespoons of tomato paste
• 1 cup of water
• ½ cup shredded cheddar or any other cheese, I use Mozzarella
• 1 cup chopped tomatoes, green onion and olives
• Sour cream to taste
Spices for the ground beef:
In large skillet bring beef and taco spices and fry on high until beef turns brown.
Add tomato paste and water, then continue to cook until the sauce thickens.
In a medium microwavable bowl warm up the refried beans.
Cut out the lettuce core and carefully separate each leaf from the head . Watch video here
Use each leaf as a serving dish by layering it with refried beans, fried beef, tomatoes, onions, olives and top it with sour cream and cheese.
