Lemon Napoleon Puff Cake
Napoleon was always my most favorite cake from childhood. We had this cake for almost every holiday and specially for New Year. I remember my mom making it and my sister and I seating around and helping her to eat whatever was left, crumbs, icing and all of these mixed together. It took my mom sometimes the whole day to make this cake because it is very complicated process and time consuming. Normally my mother finished this cake after we went to bed. And my sister and I ran to refrigerator next morning to see if it there. It is the sweetest memory!
The Napoleon cake that I am going to introduce is not very difficult to make and does not require a lot of time, it is more simplified version but the taste is directly from heaven.
I decided to experiment this time again and a hint of lemon to it. You can actually add any berry puree if you are not big lemon lover, I believe that it will taste good as well.
For about 8 servings you will need:
• 1/2 package puff pastry
• 1 instant vanilla pudding
• 1 1/3 cups milk
• 1 cup heavy whipping cream
zest from one lemon for custard and some for decoration
• 1 lemon
• 1/2 cup of sugar
Bake your puff pastries according to the instruction on the package and let cool them completely.
In a mixing bowl mix your pudding mix with milk and set it aside for 5 minutes so it will thicken up.
Whip heavy whipping cream until it forms light picks.
Add your pudding mixture into whipped cream and mix it gently together until it is completely combined.
Add some of your lemon zest into the custard.
Now prepare the lemon filling. Blend your lemon in the blender then add sugar and blend it again until it is well combined. Set it aside.
Place your prepared custard into a pastry bag and squeeze some on the cake platter.
Place one baked pastry puff on top.
Squeeze about half of the custard on top of this layer and cover it with another pastry puff.
Fill second pastry puff with lemon filling and cover it with third pastry puff. Squeeze the rest of the custard on your last pastry puff and decorate with lemon zest.
If you making it with berries use fresh berries for garnishing.
Serve it immediately or when needed. This dessert best tasting when used the same day when it is made.
