Layered Summer Meatloaf
When I am waiting in the check-out line at the grocery store, I always like to look through food magazines and any publications related to food. Sometimes just a quick surf through colorful pictures of food, helps to find ideas for my everyday home cooking which turns into my recipes from ordinary to something tasty, fun and really interesting!
In one of our grocery stores I found a small booklet about casserole cooking, this made me think of an idea to make a layered meatloaf with sweet peas and fresh tomatoes.
One summer night my family asked me to make a meatloaf for dinner, usually I do not make it in the summer as it is more of a winter food. This is when my idea became handy!
The meatloaf came out very moist and light and can be served as a complete meal which is great for a hot summer dinner.
For 4 servings you will need:
- 1 ½ pound of lean ground beef
- 1 chopped onion
- 1 egg
- ¾ cup of quick oatmeal
- ½ cup ketchup
- 1 chopped tomato
- 1 cup frozen sweet peas
- 1 teaspoon Himalayan pink salt
- Black pepper to taste
- 1 tablespoon dry basil or any Italian herbs, you can also use fresh basil for garnish
- 2 tablespoons Parmesan cheese
Preheat the oven to 350F. In a big mixing ball combine ground beef, chopped onions, egg and ketchup, mix well. Add oatmeal, Himalayan salt, dry herbs and black pepper and mix it again.
I used baking dish for bread and start making layers with the meat mixture on the bottom, sweet peas in the middle and chopped tomatoes on top. Sprinkle the top with Parmesan cheese and place into the oven for one hour.
When it is done, garnish with fresh basil and serve.
