Jack-O-Lantern Mandarin Orange Salad
I am serving this salad every Halloween night for my family. Some time ago I found a picture on Internet of a cute made out of oranges Jack-O-Lantern salad bowls. I though this idea so great because it will work for adults and for kids party as well. It is very easy to make and also inspires personal creativity. My daughter loves to draw faces on oranges and then my job is to cut them out. This salad bowl can be also used as a candle holder.
For 3 servings you will need:
- 3 large oranges you can also use grapefruits
- 2 cups lightly packed spring mix salad
- 1 can of mandarin oranges
- Any vinaigrette salad dressing (I use Asian Ginger)
- Won ton noodles
- 1 tablespoon orange juice
To prepare the oranges first wash them and cut the ends off.
Take the middle part of the oranges out using the spoon. Cut out eyes, nose and mouth.
In mixing bowl mix spring mix, mandarin oranges and won ton noodles, toss them with salad dressing and orange juice.
Serve them in your Jack-O-Lantern cups.
This salad can be a good side dish to your main course such as grilled chicken, steak, pork or Spinach Phyllo Pie.
