Home Made Mayonnaise from Elena, Florida
It is so much fun to cook and share your recipes with your friends! Last week, my friend Elena invited me to her house to share her recipe of homemade mayonnaise with us. Elena is a beautiful Russian lady who loves cooking and also likes to invite friends to her house. She knows many recipes that have been passed down from her mother and grandmother. This is why Elena follows a more traditional way of cooking which means she likes to prepare her family meals from scratch. And she also believes that by preparing your food this way is not just healthier for her family but also shows them that they are loved and cared for. This is why it was not a surprise for me that Elena decided to share with us her very delicious homemade mayonnaise made from scratch.
This mayonnaise can be used for sandwiches and also as a light dressing for salads and can be served as a dipping sauce for meat, poultry and fish.
This recipe makes about 30 fl oz or 900 ml of mayonnaise.
This is what you will need:
• 3 eggs
• 2 tablespoons of mustard
• 1 ½ to 2 cups of olive oil
• ½ teaspoon of salt
• ½ teaspoon of black pepper
• ½ – 1 teaspoon of any dry herbs
• 1-2 tablespoon of lemon juice
• ½ red chili pepper if you would like to add a little spicy bite to it
In the mixing bowl crack eggs and mustard blend it for about 1 minute with the hand blender or mixer and then add lemon juice, salt, and pepper. While blending, slowly pour olive oil into eggs and watch the egg mixture turning thicker. When it reaches the desired consistency, add any dry herbs or you can also use fresh chopped garlic and dill this make your mayonnaise tastes very delicate. Use your mayonnaise right away or store it in the refrigerator for up to 10 days.
