This summer our family was very busy, we had my sister and her son visiting us for a month. We spent a lot of time outside and went down to Florida for a week so that kids can spend more time at the beach swimming and playing on the sun. I was trying to cook very healthy and nutritious food for all of us and specially for the kids. Most kids including my daughter and my sister’s son do not like eggplant, but surprisingly our kids asked for seconds after trying theses patties. I found this recipe on one of the Face book chefs webpage, I liked the description of it and decided to give it a try. I changed a few ingredients from the original recipe, substituted them and they came out very delicious. You can hardly tell that these patties made out of eggplants. You should try to make it too!
For about 12 patties you will need:
• 1 large eggplant cut into small cubes
• 2 minced garlic cloves
• 1/2 cup fresh ground Parmesan cheese
• 1 egg
• 1 cup quick oatmeal
• handful of chopped parsley
• 1 cup of Panko bread crumbs
• 2 tablespoon olive oil for drizzle on top while broil
• 2 tablespoons of olive oil for cooking eggplants
• salt and pepper to taste
• 1/2 cup of water
Preheat olive oil and then add eggplants and toss it for few minutes.
Add water and turn the heat down, cover the pan and cook eggplants until soft.
Bring cooked eggplants into large mixing bowl and let them cool completely.
Then add garlic, egg and mash it with the fork leaving small chunks of the eggplants. Add oatmeal and Parmesan then mix it again. If the consistency of the batter is still very runny add more oatmeal. Last add salt, pepper and chopped fresh parsley.
With wet hands form the patties and then dip them into Panko bread crumbs make sure that they are evenly covered on the both sides.
Place patties into baking sheet covered with aluminum foil. Drizzle eggplant patties with olive oil and place them under 500F broil for 5 minutes. Then turn each patty as they brown and broil for another 5 minutes. They need to have a nice even golden crust.
Serve your eggplant patties warm or cold by itself or as a side dish to any meat. Enjoy!
