Crunchy Pickled Salad
This salad I found lately on one of the Russian Social media sites. It is great addition to any meal and is also great tasting. People like myself who like pickled cucumbers and sauerkraut will find this dish as a two in one. It is crunchy, it is not too salty and medium sweet, it is also very healthy.
For about 8 servings you will need:
• 1/2 cabbage head chopped
• 5-6 small cucumbers sliced
• 6 garlic cloves sliced
• 2 tablespoons kosher salt
• 4 tablespoons granulated sugar
• 1 cup apple vinegar
• 1/3 cup sun flour oil or any other oil you prefer
• 4 cups of water
• 1 teaspoon paprika
• 1 tablespoon dry dill
• 2-3 bay leaves
• 5-6 pepper corns
In large glass mixing bowl or large glass container start layering your mixture into a thin layer of cabbage
then cucumber and garlic.
Prepare marinade. In sauce pan bring water to a boil then add salt, sugar, dill, paprika and mix it well until salt and sugar dissolves.
Then pour vinegar and oil into it and let it boil for 2 minutes then turn your marinade off.
Add peppercorns and bay leaves, then pour your hot marinade onto the cabbage and cucumbers.
Let your salad marinade for 5 hours then drain all of the liquid off and refrigerate for at least one hour before serving.
Now your cabbage and cucumbers zesty salad is ready to eat!
