Crab Salad Stuffed Mushrooms
I love seafood and everything which is from the seafood is my favorite food. During the Soviet Union era we had a very small selection of seafood except or crab meat which was always on everyone’s table during the holidays. This is probably why crab meat is so popular in Russia and there are many different dishes you can find made with this meat. My daughter also started loving crab meat just a few years ago sense then everything which is made with crab she likes however she does not like mushrooms (she used to say “I do not eat fungus”) so I decided to make mushrooms stuffed with crab salad and guess what? She now likes mushrooms as well! These mushrooms are mouthwatering and very tasty. They could be served as a addition to your holiday dinner, New Year party dinner or as an appetizer.
For about 3 to 4 servings you will need:
• 7-8 medium size Portabello mushrooms
• 5 tablespoons of cream cheese
• 2 tablespoons of bread crumbs
• 1 handful of chopped parsley
• 2 tablespoons of Parmesan cheese
• 3 chopped garlic cloves
• have a package of crab meat chopped
• salt and fresh ground pepper to taste
In mixing bowl combine together crab meat, cream cheese, bread crumbs, garlic, parsley and mix it all well.
Clean your mushrooms and remove the stems, do not wash mushrooms under the water just use a damp towel or paper towel to clean off any dirt. Stuff the mushrooms with your crab salad, line them up on the baking sheet covered with parchment paper or aluminum foil and bake at 350F for 20 minutes.
Serve your Crab Salad Mushrooms warm or cold. Enjoy!
