Blueberry Muffins with Kefir from Scratch
For those moms who have school age kids, it is an ongoing concern to how to feed your child with nutritious breakfast and make them eat it before they go to school. I have had this challenge since my daughter started a kindergarten. My daughter is a very picky eater and I have to be really creative on what to make for her for breakfast, lunch and dinner. I came up with this recipe based on what Bill Cosby said in his “Bill Cosby Himself” show: it has eggs…it has dairy, butter, flour and a ton of blueberries so I can call it nutritious! The secret key of this recipe to put in a lot of blueberries and when you take a bite of it the blueberries will burst in your mouth! Even if this recipe has to be made from scratch, it is very easy to make.
From this batch you can make about 15 medium size muffins.
• 2 eggs
• 1 cup of sugar
• 2 3/4 cups of white all purpose flour
• 1 stick of soften unsalted butter or margarine
• 1 cup or 250 ml of plain Kefir
• Pinch of salt
• 1 teaspoon of baking soda
• 1 teaspoon vanilla extract
• 2 cups of blueberries
Preheat the oven to 350F. Meanwhile beat eggs and sugar together for about 3-4 minutes. Add butter and mix it well together until all small pieces of butter completely dissolved.
Pour Kefir and mix it again, then add baking soda, salt and vanilla and blend it into your batter. Gradually add flour and mix it until the mixture is smooth in texture. Lastly add your washed and be sure to completely dry your blueberries.
Grease the muffin pan or line it with muffin cups, then pour your mixture filling up to about ¾ of the muffin cup. Bake it for about 25-30 minutes check if it is ready with wooden stick.
Serve it with other fresh berries with sprinkled powdered sugar on top.
