Black Forest Log Cake
This is my favorite cake because it is not just good tasting but it is also looks very nice on the holiday dinner table. In Europe it is a tradition to make a log cake for Christmas supposedly it will bring prosperity and good luck to the family. It became a tradition in my family too.
For about 12 servings you will need:
For the cake:
• 5 eggs
• 10 tablespoons of sugar
• 10 tablespoons of all purpose flour
• 2 tablespoons of cocoa powder
For the cherry filling:
• 1 cup frozen pitted cherries
• 2 tablespoons of Amaretto
• 2 teaspoons of cornstarch
• 2 tablespoons of sugar
• 1 cinnamon stick
For the icing:
• 1 cup heavy whipping cream
• 2 tablespoons powdered sugar
• 2 tablespoons Amaretto
• 1 cup water
• 1 package gelatin
• 1/2 7 once dark chocolate bar
• 1/2 cup whipping cream
• Maraschino cherries
• Chocolate shavings
In a small sauce pan mix sugar, Amaretto, cherries and cinnamon stick.
Turn heat to medium high and cook cherries until they start bubble then cook for another 2 minutes until the liquid gets thicker.
Transfer cherries to the bowl and let them completely cool down.
Now it is time to make a cake. In large bowl beat on high eggs then slowly add sugar one table spoon at a time. Beat it until eggs double in size and get light and foamy. Then slowly fold sifted flour one tablespoon at a time until it is completely combined at the end add cocoa powder and mix it well.
Line parchment paper on a greased shallow baking sheet and spray it with oil.
Pour your batter into the sheet and place it in the oven for 20 minutes or until wooden stick comes out clean at 325F.
Tip: To roll your cake place it hot on a clean towel sprinkled with powdered sugar.
Using a towel roll it up gently trying not to crack the cake. Leave it in the towel until cake completely cools down.
Meanwhile prepare the filling. Place your gelatin in one cup of cold water and leave it for 2 minutes,
then pour the gelatin into a sauce pan and heat it up until it is completely dissolved, take it off the heat and let it cool down.
Use a hand mixer on high and beat your whipping cream, Amaretto and sugar until it becomes stiff, then slowly sprinkle the gelatin until it is mixed together.
Spread the cream filling and cherries on top of your cake crust
then freeze for about an hour.
To make a ganache, bring the whipping cream to a boil and then pour it over the pieces of chocolate breaking it into small pieces. Let it sit for 15 minutes then stir it with a spatula until it has a smooth consistency.
Let your ganache cool a little bit to thicken up, then pour it over the rolled log.
To make shaved chocolate: Melt dark chocolate in the microwave and pour it on a piece of foil. Let it freeze, then break it into small pieces or shave it using a potato peeler.
Decorate your log with shaved chocolate and Maraschino Cherries then refrigerate before serving.
