Berry Squares Dessert from My Grandmother
Everybody who is from Russia probably remembers this very delicious dessert. There are so many versions on how to make it. The recipe that I would like to share with you was passed down to me from my grandmother. She always used raspberries preserves because fresh raspberries were hard to find. It always been a hit on our family holidays gatherings. I modified this recipe after seeing what other have done with similar desserts. It is very easy to make and would not take a lot of time to prepare.
For about 15 servings you will need:
• 2 cold margarine sticks
• 3 cups of all purpose flour
• 1 egg
• 1 package vanilla or ½ teaspoon vanilla extract (optional)
• ½ teaspoon of baking soda
• 1 1/4 cup of white sugar
• 3-4 tablespoons of cold water
• ½ teaspoon salt
• 3 cups of berries: blueberries, raspberries, and blackberries
• 4 tablespoons of flour for the berries coating
• Zest from one lemon or orange
• 3 tablespoons of orange or lemon juice
• 9”by 13” baking dish
Preheat oven to 365F. In mixing bowl pour flour, add zest and cold margarine, chop flour with the margarine using knife until it turns to a small crumbles.
Then add one egg, 1 cup of sugar, salt and water. Mix it well; dough has to be crumbled in consistency. Divide dough to two parts.
Wash berries and dry them with paper towel. In the mixing bowl bring berries, sprinkle them with lemon juice and toss with 1/4 cup of sugar and 4 tablespoons of flour.
Grease the bottom of baking dish then pat down half of the amount of your dough.
Spread your coated berries on top of the dough and use the second half of the dough to sprinkle it on top.
Bake it for about 45 minutes or until the top will be golden in color.
Let it completely cool down and then slice into square shapes and serve.
