Banana Oatmeal Cookies
As I mention before, being mother and a wife, I am always concern about my family diet and especially the diet for my pre-teen daughter who is at the stage of her life when they are rejecting anything that comes from parents which is norm. Fortunately our daughter is very good about eating the right and nutritious food. She does not give us a lot of troubles about what to eat and she loves when I pack lunches for her to take to school. I made this cookies specially for her to eat as a snack at school and on the go. They are very easy to make and have very few ingredients.
For about 30 large cookies you will need:
• 3 ripe bananas
• 4 tablespoons unsalted melted butter
• 1/2 cup of dry fruits( raisins, cranberries, blueberries and eqs.)
• 1/2 cup brown sugar
• 1/2 teaspoon baking powder
• pinch of salt
• 1/2 cup wheat flour
• 1 1/2 cup quick oatmeal
Preheat oven to 350F. Mix together flour, oatmeal, baking soda and salt and set aside. Using fork smash bananas and add melted butter. Pour dry ingredients into smashed bananas and mix it well then add dry fruits and mix it again. Using the ice-cream scoop, scoop about 1 tablespoon of batter and place it on the baking sheet covered with parchment paper about “1 inch apart.
Bake for 12-15 minutes until top of the cookies will be light golden. Enjoy!
