Balsamic Vinegar Orzo and Zucchini Salad
Summer is good time of the year when you can boost your body with energy from the Sun from all fresh fruits and vegetables. This is what I am trying to do for my family as give them as much of the nutritious food as possible. As I mentioned before I am trying to cook very light during the summer and Orzo salad is one of my favorite dishes that not require a lot of preparation and can be done in just a few simple steps. This dish will be a good addition to your summer dinner . It goes well with grilled chicken, fish and cheese.
• 1 medium size zucchini sliced
• 1 lemon sliced into 8 wedges
• 1 cup of dry orzo pasta
• 1 tablespoon of olive oil for cooking zucchini
• 3 tablespoons olive oil
• 2 tablespoons balsamic vinegar
• 1 teaspoon dry of fresh dill chopped
• salt and pepper to taste
Prepare orzo pasta according to the instruction on the package.
In skillet heat olive oil and cook sliced zucchini in it until they get softer and light brown in color.
Prepare the dressing. In mixing bowl mix together olive oil, balsamic vinegar, lemon wedges, dill, salt and pepper.
Take another mixing bowl where you going to serve your salad. Transfer orzo pasta and add zucchini then pour the dressing, mix it well and serve.
