Baby Owl Cupcakes
I had to make a dessert for our local charity Fall Celebration, I was thinking about many different desserts like cakes, cookies or lemonade until I found these cute baby owls cupcakes in one of the food magazines. It seemed to me that it would be fun to make it together with my daughter because for very long time owls were one of her favorite character. She had toy owls, pajamas with owls, t-shirts with owls and her jewelry also had owls on it. She loved my idea and we made 24 cutest owls for this event.
Ingredients for cupcakes:
- 4 egg whites
- ½ cup butter
- 1 ¾ cup sugar
- 1 teaspoon vanilla
- ½ teaspoon salt
- 1 1/3 cup buttermilk
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 ½ teaspoon baking powder
- 3 tablespoons cocoa powder
- 1 can chocolate icing
- 1 can orange icing
For the owls ears and beak use orange and dark chocolate morsels
Use orange, white and black sprinkles for feathers.
For eyes use Mentos candies.
Preheat oven to 350F. In large mixing bowl beat on high butter for 30 seconds. Gradually add sugar about ½ cup at the time.
Slowly add egg whites one at the time and continue mixing for another 2 minutes.
Then add baking powder, salt and baking soda and mix it well.
Add flour and buttermilk into butter mixture and continue to beat on low until combined.
Divide butter into two parts and add 3 tablespoons of cocoa powder in one of them.
Line up muffin baking sheet with cupcake liner; pour batter into it about ¾ full using one part of chocolate batter and one part of white batter.
Bake for 25-30 minutes.
Let your cupcakes cool down completely then apply icing – chocolate icing for body and orange for tummy.
Apply ears, beak and yes. Use sprinkles to make a feathers.
