Avocado Shrimp Pasta Salad
I love this warm salad for lunch. It is light, it is tasty and it is healthy! My friend Carmela was harvesting a lot of Avocados this year from her trees and she gave me two nice size Florida Avocados. I was making my lunch and teasing her; texting back and forth with pictures of my scrumptious lunch. She told me that I absolutely must to post this recipe on my web site so that she could make it one day for her family too. So, my dear friend Carmela! This recipe is specially for you! I hope my readers will enjoy making this simple recipe as well!
For one portion you will need:
• 1/2 sliced Avocado
• 1/2 cup of bow tie pasta or any of your favorite pasta
• 6-7 medium size shrimp
• 6-7 cherry tomatoes
• juice of one lemon
• some lemon zest
• 4 tablespoons of olive oil
• fresh chopped cilantro
• salt and pepper to taste
Cook the pasta first. Then heat the oil in the frying pan and cook your shrimp for about 4 minutes.
Remove the shrimp from your pan and drizzle lemon juice into the left over oil and cook it for 1 minute, put your shrimp back into the pan with the oil and lemon juice soak the shrimp in the lemon sauce. Then add fresh cilantro, salt and pepper.
Add pasta and cherry tomatoes cut into halves into the pan and mix it with shrimp until pasta gets a bit warm. Remove pan from the stove.
Now your pasta is ready to be served! Serve your pasta on top of the sliced Avocado.
