Artichokes’ Hearts with the Lemon Dressing
Almost every time when I buy artichokes people keep asking me the same question how you prepare it. From what I understand most people seem a little intimidated by how to cook and eat artichokes. Honestly, it is very easy to prepare and it is very delicious. I decided to make a short video showing how to clean and cook artichokes.
Here how you do it:
In the large pot bring water and a tablespoon of salt to a boil.
First, if the artichoke has small thorns cut them with kitchen scissors.Second, cut the steam and the very top of the artichoke with the knife. Now your artichoke is ready to go to the water.
Boil it for about 35 to 40 minutes, to check if it is ready by sticking a fork in the middle and if it goes in easily then artichoke is done.
Let the artichoke cool and then peel all of the leafs from the heart. The heart of the artichoke looks very much like a toy top. Inside of this top is a fuzzy part of the artichoke which is called the choke, using spoon or a knife clean this fuzz off. I like the heart of the Artichoke but my family likes to eat the soft part of the leaf which is close to the heart, they dip the soft end of the leaf into the melted butter or mayonnaise.
Cut heart into small cubes then mix it with the lemon dressing made of:
• 1 tablespoon of lemon juice
• 2 tablespoons of olive oil
• 1 minced garlic clove
• Pinch of salt and pepper
