An Alternative: Sweet Potato Salad
My husband never liked potato salad because most potato salads that he tried used dill pickles as one of the ingredients. In Russia we have similar to potato salad dish called Olivie and it has canned peas and meat. Neither versions worked out for our family, this is how we came up with the alternative recipe which satisfied everyone’s taste.
Our family potato salad was even nominated as a bestselling item on one of the fundraising event that was held at my husband’s work. This recipe is very easy to make and can be a hit for any party!
For 10 servings you will need:
• 3 large baked Idaho potatoes
• 3 raw carrots shredded
• 2 chopped celery sticks
• 3 tablespoons sweet relish
• 1 cup olive oil mayonnaise
• 1 tablespoon honey mustard
• 1 teaspoon pink Himalayan salt
• Ground pepper to taste
Bake potatoes at 375 F for about 40-50 minutes until done, or if you are short on time you can boil them until they are slightly soft, let them completely cool down and then cut them in small cubes.
In the small mixing bowl combine mayo, mustard, relish, salt and pepper.
In the large mixing bowl come together potatoes, carrots, celery and dressing and mix well.
Garnish with parsley and serve.
